Cooking Directions:
To make this wonderful sauce all you need to do is combine all the “sauce ingredients” in a large sealable bowl or dish and blend well. Cover and set aside. In 3 small shallow dishes, flour in dish 1; the eggs, salt, and cayenne well blended in dish 2, and the cornmeal in dish 3. In a 3 step process dredge the catfish fillets thru the flour shaking off the extra, step 2, dredge it thru the egg mixture letting the excess drip off. Step 3, dredge thru the cornmeal. Once all fillets are battered transfer them to a wax paper lined cookie sheet or baking sheet. In a large kettle for frying pan heat 1 inch of oil to 350-375 degrees. Once hot, add the battered fillets for 3 minutes on each side, or until each side is golden brown and cooked thru. With a slotted spatula, transfer the fried fish onto paper towels to drain. Now on the bottom halves of the hoagie roles, layer the lettuce leaf, sliced tomato, bacon, fried fish, top with the homemade sauce and top half of roll. Serve hot and enjoy.
